Good morning

Good morning.... Busy day today for our family.... in just a bit I will be throwing a turkey into the oven for my grandmother's birthday celebration tonight.  I apologize for a lack of posts on Wednesday.  Wednesdays are one of those busy days for us.

Last night, while I was cooking dinner, the boys were playing with paint (inside a galloon zip lock bag).  This is a great craft / activity to teach about color blending, practicing writing letters, etc.  We then hung them up in the window to serve as a "stained glass" effect.  The kiddos loved them!  Try it with your kiddos when you need a short break or if you have rainy weather.

Dinner Tonight.... Hungarian Pork Stew

Well, the house is smelling pretty yummy right now!  Dinner is hungarian pork stew, served over rice and a salad on the side.  Yummy!

Hungarian Pork Stew

2 lbs. Pork meat, chopped for a stew
1/4 c olive oil (give or take to brown the meat)
1 med. onion
1 can tomato paste
3 T garlic salt
3 T savory seasoning
2 carrots, chopped
2 cans (4 cups) chicken broth (can also use veggie or pork broth)

Brown the meat in the oil, season with garlic salt and seasonings.  Add carrots, tomato paste, and onion.  Cover with water and turn heat down to simmer.  Simmer until the broth becomes thick.  Serve on its own, with a dallop of sour cream, or over rice.  Yummy with homemade bread or grilled cheese too.

Zone 4: Mission #3 Wednesday

Dear Friends:
Today is the day that you get a really short mission. The only thing you have to do is grab your feather duster or dust rag and dust off the tops of your door jambs and windows. I am short and don't really see the tops of these areas very often, so I have a tendency to forget about them. Take the duster or rag and wipe across the tops of the molding and jambs. Take a swipe across the hinges as well; they seem to collect little dusties as well. This is quick and easy and makes quite a nice difference.

My little guy's Letter

So, I have been searching and searching for over a year now to obtain the letters to my youngest son's name, without spending big $ (anything over $10 is big for me).... here's what I came up with as a craft project.  The oval says "May your life be filled with beautiful sunsets, great waves and sand between your toes."

Back at it again....

Well, I am back at the blogging business.... I love being a stay at home mom (something I never would have pictured before).  So here I am ... today's agenda so far... making letters for the kiddos bedrooms (photos to come soon), brining a turkey for my grandmother's birthday party tomorrow, laundry and general cleaning, and some quality time in the kitchen.

The other day I made a wonderful potato bread... if you want to try it out, here is the recipe... yummy!

Directions:

  1. 1
Add all ingredients to bread machine in order listed, or as recommended by your bread machine.
  2. 2
Select desired setting and press start.
  3. 3
I make this using the basic cycle and the lightest crust setting.

Cinnamon Rolls

Happy Thursday!

I don't know about your week, but I have felt like it was Friday every day thus far. I am so glad that the weekend is just around the corner. I am sure you are too!

Here in California the weather started to change into a fall like atmosphere.... I love it! The cool air in the morning and the warmth of the afternoon. It just puts you in the mood for good heart warming food. So here are two of my favorites that I know you will love!

Bread Machine Cinnamon Rolls
I just made these for my family on Monday, and it lasted all week long for our breakfast. You can make these the night before, stick in the fridge, and then pop them in the oven before starting your morning routine. Yummy cinnamon rolls will be ready for you just before you leave out the door.

Layer in the bread machine as listed:

1 c. milk
1/3 c. butter or butter substitute
1/3 c. sugar
1/2 t. salt
3 eggs (egg substitute equivalent)
2 1/4 c. white flour
2 1/4 c. white wheat flour
1 pkg yeast or rapid yeast

Set items on the dough cycle.

Once dough is made, roll out the dough to a 9 in x 14 in rectangle onto a floured surface. Spread filing onto the dough, gently pressing down to make rolling easier.

Filling

1/2 c. brown sugar
1 T. ground cinnamon
3 T. soft butter (or butter substitute)
1 c. raisins

Roll the dough into a log and cut the rolls, giving about 2 inches width. Place rolls into a 9 x 12 in sprayed pan. Spray the top of the rolls with cooking spray. Cover with plastic wrap and place into the fridge to allowing them to rise.

In the morning, preheat the oven to 375 and bake for 25 minutes. Glaze with a icing (1 c. powder sugar, 1/2 t. vanilla, 1 to 2 T non fat milk).

Squash Blossom Quesidillas
Okay I know this sounds weird, but they are so yummy and very healthy.

Low fat corn tortillas
1/4 c. reduced fat Colby jack cheese, shredded
1 zucchini mini squash with blossom

Cut zucchini in half and steam in the microwave. Warm up tortilla on a skillet. Put cheese and steamed zucchini into the tortilla and fold in half. So yummy, but very good for you.
